Description

Produced at Herdade das Assentes de Baixo, this wine is made from carefully selected Antão Vaz, Arinto, and Roupeiro grapes, handpicked at their best.

Combining tradition and innovation, part of the wine ferments in ancient clay amphorae — as the Romans once did — in a fully manual and natural process, without mechanical pumps and using indigenous yeasts. The other part is vinified in stainless steel vats with controlled temperature, ensuring balance and precision.

The stainless steel lot then ages for one year in used French oak barrels, with no sulfur correction, resulting in a genuine wine with character, complexity, and great aromatic expression.

Nota de Prova

It shows an orange-yellow color. The nose is intense, with white fruit and tropical fruit notes — quince jam, honey, and dried fruits.
There is a balanced aromatic profile between the toasty notes from the oak and the minerality from the clay amphora.
On the palate, it is smooth, full-bodied, and enveloping. The finish is refreshing, with good acidity, revealing a dry, firm, yet very pleasant and food-friendly character.

Ideal to pair with white meats, pâtés, well-cured fatty ham, baked fish, pasta, risottos, and… cheese… especially cheese!
