Description

Katori 90 by Terada Honke is a 100% organic, handcrafted sake from a brewery whose history dates back to the 17th century. Made with Koshi Hikari and Akita Komachi rice varieties, it has a remarkably low polishing rate of just 10% (semibuai 90%), preserving most of the grain. Contrary to expectations, its profile is not strongly cereal-driven. Instead, it reveals a surprisingly rich and complex aromatic palette, where fruity, herbaceous, mineral and saline notes come together in a distinctive expression.

Nota de Prova

Colour: Slightly coloured and cloudy.

Nose: Fresh and mineral, with notes of mandarin, melon and grape, alongside milky nuances, herbaceous hints of straw, sage and oregano, and iodine-like notes. Further aromas of anise, flowers and black olives add complexity.

Palate: Rich and complex, bringing together an unusual combination of fruity, herbaceous and mineral notes in an expressive and distinctive profile.

Suggestions

Versatile in serving temperature, it can be enjoyed warm, chilled or at room temperature. It pairs particularly well with tuna and eel sushi, as well as Asian-inspired dishes such as wok-fried salmon and prawns with spiced rice and coriander flowers. It can also be cellared for up to 2 years.
