Description

Kinkame 80, produced by the traditional Okamura Honke brewery, is a sake with an intense personality that revives a more ancestral brewing style. With minimal rice polishing, it preserves the richness and character of the grain, resulting in a generous profile, a pronounced rice aroma and a golden hue. Unpasteurised, unfiltered and undiluted, it has a full-bodied texture and an enveloping, almost candy-like sweetness, balanced by lively acidity. An authentic and unconventional Junmai with a rustic character and a presence that makes itself known.

Nota de Prova

Colour: Golden yellow.

Nose: Intense and expressive, dominated by cooked rice, honey and subtle nutty nuances, with a gently rustic edge.

Palate: Sweet and rich, with pronounced rice flavours and fresh acidity that balances its intensity. Full-bodied, dense and slightly rustic in texture.

Finish: Long, bold and gently warming.

Suggestions

Although it can be enjoyed warm, it is recommended to serve it well chilled to highlight the balance between sweetness and acidity. It pairs particularly well with rich-flavoured dishes, fermented preparations and umami-rich cuisine. It is also worth enjoying on its own to appreciate its distinctive personality.
