Kizan Sanban, produced by Chikuma Nishiki, is a Nama Genshu sake distinguished by its balance of aromatic intensity, rich flavour and refreshing acidity. Unpasteurised and undiluted, it has an alcohol content of 15%, achieved by stopping fermentation a few days earlier than usual to retain a higher level of residual sugar. This gives it a subtle sweetness which, combined with the naturally high acidity associated with the pure water of the Nagano region, creates a smooth, rounded and expressive profile. Unlike many Ginjo sakes, where aroma takes centre stage, Kizan Sanban stands out for its rich palate while retaining the aromatic elegance typical of this style.
