Description

Sakura wo Dozo Junmai Yamahai Genshu is a powerful and expressive sake, excellent both at room temperature and when heated. The nose is aromatic, fresh, and green, showcasing the traditional Yamahai character, with notes of undergrowth, citrus, and mushrooms. As it opens, brighter aromas of juicy white peach and cooked rice emerge. On the palate, it is fresh with a sweet umami from the start, developing mid-palate with a subtle hint of bitterness. Notes of root vegetables and mushrooms are complemented by a lively, salivating acidity. The finish reveals a slight alcoholic warmth with umami, hints of apple, rice, and white pepper. When served hot, the sake gains invigorating, almost spicy acidity with pronounced aromas of rice and peach, finishing more direct, dry, and full of umami.
