Description

Zuikan Kimoto Junmai Ginjo is a calm and traditional sake produced using the classic Kimoto method. The aroma reveals sensations of freshly cooked rice and cereals, complemented by fresh notes of green apple, mint, star anise, and white pepper. On the palate, it opens roundly, with a menthol freshness that quickly dominates the mouthfeel, slightly tangy and almost iodized. The freshness continues through the mid-palate with beautiful umami and subtle mushroom notes. Umami intensifies at the finish, leading to a dry, raw, and lightly tannic ending. Made from Yamada Nishiki rice, this sake is extremely versatile and excellent served cold, at room temperature, or hot.

Aroma: Cooked rice, cereals, green apple, mint, star anise, white pepper, mushroom, soy sauce, clove, baked apple.

Palate: Round entry, menthol freshness with slight acidity, evolving into a mid-palate with pronounced umami and mushroom notes.

Finish: Dry, persistent, and lightly tannic, with intense umami and elegant vegetal and fruity hints.

Suggestions

Serve fresh, between 12ºC, at room temperature 18ºC, or hot, up to 38ºC. Ideal with chicken broth, shellfish, crabmeat with avocado, omelette with girolle mushrooms and garlic herbs, truffle croque-monsieur, or duck breast with green beans.
