The Kilchoman Sauternes Cask Matured is a remarkable limited edition fully matured in ex-Sauternes wine casks and bottled in 2024.

Selected personally by founder Anthony Wills, this expression combines fresh and refill Sauternes barriques from two separate vintages — the youngest dating from 2018 — delivering an exceptional balance between sweet wine influence and Kilchoman’s unmistakable Islay character.

After a six-year absence, this release marks the return of full Sauternes maturation, moving beyond a simple finish to showcase the complete power and depth these French dessert wine casks can impart to the spirit.

As Anthony Wills explains: “After a six year absence, the Sauternes Cask Matured Kilchoman is back! The previous edition was a Sauternes finish, now it’s time for a return to the full power that complete maturation in these wine casks brings. Waves of sweet fruits and butterscotch balanced with our Islay peat smoke, a delicious dram.”

Color: Rich golden amber with luminous highlights.

Nose: Buttery sweetness, barbecued pineapple, candied ginger, and floral peat smoke rising in elegant waves.

Palate: Layers of honeyed tropical fruits, butterscotch, citrus zest, and warming spice, beautifully intertwined with maritime peat smoke.

Finish: Long and indulgent, with lingering sweet fruit, gentle salinity, soft oak spice, and refined smoky depth.

Suggestions

Enjoy neat to experience its full texture and richness, or add a few drops of water to enhance its fruit complexity. Best served between 18 and 20ºC.
