Description

Produced at Herdade das Assentes de Baixo, this wine is made from carefully selected, hand-picked grapes of the Antão Vaz and Roupeiro varieties.

Following a philosophy of minimal intervention, it respects nature’s rhythm at every stage. Fermentation occurs spontaneously with natural yeasts, both in stainless steel lagares and in old clay amphorae, inspired by Roman tradition.

The entire process is carried out with the utmost care — without machines, with the amphorae filled manually, just as it was done in the past.

The result is a pure, elegant wine full of character, with a natural freshness that makes it perfect for relaxed moments, at the table or outdoors.

Nota de Prova

It shows a golden yellow colour. Expressive on the nose, with white fruit and some tropical notes.
Deep and mineral, with clear influence from the clay amphora. On the palate, it offers good acidity, a smooth entry, and balance throughout the tasting, revealing a dry profile and excellent food pairing potential.

Suggestions

Ideal to pair with white meats, cold salads, baked or grilled fish dishes, pasta, risottos, and cheeses.
